This role serves as the strategic and cultural leader of Food & Beverage, providing direction across restaurant, bar, and Grab & Go operations. Reporting to the General Manager, the Food & Beverage Manager is responsible for developing leadership capability within the department — particularly guiding and elevating the Outlets Manager — while driving performance, accountability, and alignment across all F&B touchpoints. Beyond operational oversight, this leader functions as a catalyst for innovation, service excellence, and Team Member development — strengthening collaboration, elevating both guest and Team Member experiences, and building the next generation of Hilton leaders. Lead the overall F&B strategy with focus on revenue growth, profitability, and exceptional guest experiences aligned with Hilton brand standards. Analyze business performance including labour productivity, flow-through, guest satisfaction, and financial results. Partner with the Executive Chef on menu engineering, pricing strategy, and concept evolution. Identify innovation opportunities that enhance market positioning and guest engagement. Ensure departmental initiatives align with hotel objectives and Hilton brand expectations. Drive a performance culture rooted in accountability, results, and continuous improvement. Leadership of Leaders & Talent Development. Provide direct leadership, coaching, and structured development to the Outlets Manager. Guide the Outlets Manager in building high-performing outlet teams focused on guest loyalty, service excellence, and Team Member engagement. Hold the Outlets Manager accountable for guest satisfaction metrics, quality assurance results, financial performance, and team culture. Establish clear performance expectations, development plans, and succession pathways for F&B leaders. Lead regular leadership meetings that foster alignment, collaboration, and shared ownership of results. Develop future Hilton leaders by building management capability, strengthening leadership skills, and modeling Hilton Values. Team Member Experience & Culture. Champion a people-first culture that reflects Hilton’s commitment to hospitality and inclusion. Drive engagement initiatives that improve retention, morale, and Team Member pride. Ensure leaders are visible, actively coaching, and present in the operation. Create clear accountability structures that reinforce standards while supporting professional growth. Recognize success and address performance opportunities with fairness, consistency, and care. Ensure seamless, brand-aligned execution across restaurant, bar, and Grab & Go operations. Strengthen cross-functional collaboration between Food & Beverage, Culinary, Sales, Front Office, and Events teams. Serve as a connector between outlets and banquet operations to ensure consistency of service, culture, and standards. Standardize and elevate training programs, service rituals, and operating procedures. Oversee inventory management, procurement standards, liquor controls, and compliance practices. Maintain a strong, visible presence in the operation while balancing strategic responsibilities. Guest Experience & Brand Commitment. Set and communicate the vision for exceptional guest experiences across all F&B touchpoints. Monitor guest feedback, brand metrics, and service scores; ensure action plans are implemented and sustained. Lead service recovery with urgency and a commitment to guest loyalty. Continuously evolve offerings to remain competitive and relevant within the local market. Ensure the 24-hour Grab & Go market is properly merchandised, profitable, and aligned with Hilton standards. Provide expertise and strategic guidance to banquet operations as required. Partner with Sales and Events to maximize event revenue and deliver memorable experiences. Support large-scale events with visible leadership presence and operational oversight. Compliance, Safety & Risk Management. Ensure full compliance with provincial labour legislation, liquor regulations, and public health standards. Oversee Smart Serve and Food Handler certification compliance. Lead food safety audits and risk mitigation initiatives, including EcoSure standards. Promote a safe, respectful, and compliant workplace for all Team Members. Leadership of Leaders.
