A minimum of 1 year experience as a baker working with quick breads, starters, laminated doughs, enriched doughs, and bread . Experience in a high-volume bakery, hotel experience highly preferred! Working knowledge of baking equipment (large scale mixers, proofers, scales, sheeters etc). The ability to read and follow written recipes. Prepares and bakes all breakfast pastries, breads, rolls and some desserts for restaurants and banquets. Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration. Ensures spoilage and waste are kept to a minimum by ordering and utilizing proper quantities and rotating products. Prepare food items according to standard recipes and as specified, to ensure consistency of product. Prepares cookies, pies, dough and other basic items as instructed. Performs all prep work for cakes, pies, mousses, plated desserts, fills danish, organizes and cleans walk-in coolers and freezers. Stores all food products in walk-in coolers/freezers and dry storage, including covering, lableing dating and proper rotation. Performs general/routine cleaning tasks using standard hotel cleaning products as assigned by your supervisor, to adhere to food safety and sanitation standards. Performs HACCP monitoring of temperatures (hot and cold holding, and refrigeration equipment) and maintains good food safety and sanitation standards, proper use of sanitizing solution. Quality.
