Junior Sous Chef - Café Boulud

As Junior Sous Chef for Café Boulud, you will play a key role in menu development, kitchen leadership, and operational execution. You will support the Sous Chef, Senior Sous Chef and Head Chef in guiding the brigade, ensuring culinary consistency, cost control, and an outstanding gastronomic experience for both guests and members. You will perform the following duties to the highest standards of luxury gastronomy. Contribute creatively and collaboratively to menu development in line with Café Boulud’s culinary philosophy. Supervise, train, and motivate the kitchen brigade to ensure a disciplined, cohesive, and high‑performing team. Maintain uncompromising consistency in food quality, presentation, and flavour. Engage professionally with guests when required, supporting positive dining experiences in the absence of senior kitchen leadership. Ensure optimal staffing through effective rota planning aligned with business volumes. Uphold brand and culinary standards through continuous training, coaching, and performance assessment. Monitor and control food costs to support departmental profitability and revenue objectives. Maintain awareness of interdepartmental operations and their impact on kitchen performance. Ensure full compliance with food safety, hygiene, and Health & Safety regulations at all times.
