ROLE
As
Restaurant Manager
of our Brasserie, you are the driving force behind an exceptional dining experience in one of Munich’s finest luxury settings. You lead, inspire and develop a committed team, ensuring every guest interaction reflects warmth, authenticity and Rosewood’s intuitive service philosophy.
You take full operational ownership of the Brasserie, combining hands-on leadership with strong commercial acumen and a sharp eye for quality. Above all, you create an environment where colleagues feel empowered and guests feel truly cared for.
The position offers a gross monthly salary ranging between 4.650,-€ and  4.850,- €.

HOW YOU’LL MAKE THE PLACE
Oversee and manage the daily operations of the Brasserie, ensuring seamless service delivery in line with Rosewood Munich’s luxury standards
Lead, coach and develop the service team, fostering a culture of excellence, accountability and genuine hospitality
Take full operational ownership, including opening and closing procedures, shift handovers, service flow and mise-en-place standards
Monitor and control departmental costs, including labor, operating supplies and breakage, in close collaboration with the Director of Food & Beverage
Review revenue reports, forecasts and variances, ensuring financial targets are met while maintaining service excellence
Control POS settlements, cash handling procedures and billing accuracy in line with hotel accounting policies
Maintain and enforce quality standards across food presentation, beverage quality, ambiance, table setup and colleague grooming
Conduct regular quality audits and mystery guest follow-ups, implementing corrective actions and tracking KPIs
Ensure full alignment with LQA, Forbes Travel Guide and Rosewood brand standards, proactively preparing the team for assessments

A natural leader with exceptional interpersonal and communication skills
In-depth knowledge of luxury service standards, including LQA and Forbes Travel Guide
A passion for developing people and building high-performing, engaged teams
A calm, confident presence with the ability to handle complex guest situations with elegance
Completed vocational training or degree in Hospitality, Hotel Management or a related field
Minimum 3–5 years’ experience in a similar leadership role within a luxury 5-star hotel or fine dining environment
Proven experience in F&B operations, guest relations and team development
Fluency in English required; German and additional languages are a strong advantage
